recipe: butter lettuce with avocado + fresh dill
ingredients:
2 medium-large heads of butter lettuce
2 ripe but firm avocados
one bunch of fresh dill
vinaigrette:
juice of 2 lemons
squeeze of dijon mustard
drizzle of maple syrup or agave
generous pinch of salt
several grinds of fresh pepper
about 1/2 to 2/3 cup of your best extra-virgin olive oil
Wash and dry the butter lettuce, making sure that it’s quite dry (otherwise the vinaigrette will slip off and the salad will be soggy).
Combine all the vinaigrette ingredients into a Mason jar, tighten the lid, and shake well until combined. Remove the lid and adjust for your preferred flavor, tweaking with a little extra salt, sweetness, or more olive oil.
Just before serving, cut the avocado into generous chunks and place into a small bowl; toss with a drizzle of of the vinaigrette.
Lightly dress the greens with the vinaigrette, then add in a generous handful of roughly chopped dill. Toss again, then begin layering into your favorite salad bowl or platter. Layer in the avocado, top with more greens, and finish with an additional sprinkling of fresh dill. Serve at once, and watch your family and friends swoon for seconds.
